Welcome to Red Dog Saloon, where we keep it real, simple, and insanely delicious. We’re all about that authentic Austin, Texas BBQ vibe, bringing you flavours rooted in tradition but refined for today.

In central Texas, it’s all about the rub. Just salt and black pepper, letting the meat’s quality shine through. That’s why we’re obsessed with using only the highest quality meats and the best ingredients. We respect our produce and are passionate about doing things right.

Our smoked meats steal the spotlight, but we have also crafted the perfect sides that make the Red Dog BBQ experience the best there is. Think hickory maple bacon mac & cheese, homemade slaw, and pit beans—all made with the same love and care as our barbecue.

Who We are

Red Dog Saloon was born in 2012, thanks to chef Tom Brooke. Tom opened his first restaurant in Hoxton Square, right in the heart of London. In the years that followed Tom perfected the art of BBQing while growing the Red Dog brand and reputation.

Why Texas BBQ?

Tom grew up spending a lot of time in the U.S., it was these trips that ignited a passion for food. What really grabbed Tom’s attention was the food culture in Austin, Texas. It felt special, and he set out to learn everything he could about it. From pit tours to chatting with locals who had generations-old recipes, Tom realized it wasn’t just about cooking and eating – it was about respecting the meat, using top-notch ingredients, and having the patience to let the meat cook perfectly. Then getting together with family, friends or neighbours and enjoying the experience together.

Today, there are five Red Dog Saloons across the UK: in London (Hoxton and Soho), Nottingham, Southampton, and Liverpool. Tom has built a solid team around him, all just as dedicated to bringing the passion and love of Austin BBQ to Red Dog Saloon guests.
